Well, when you have different installs of courier-authlib, each one will have its own courierauthconfig in its bin directory.
Put the appropriate directory in PATH before running Courier-IMAP's configure script.
This'll work; but as I said, whatever you're really trying to accomplish, it's likely that there'll be a better way to do it.
