I thought that Courier would use AAAA records in favor of A records? I
noticed that when sending to gmail Courier is not using AAAA any more.

There were no recent changes.

Courier would try to use cached A or AAAA records if they come back with the DNS query for the MX record, instead of making another DNS query.

So, the choice of which records get used also depends on your DNS server's caching behavior.
