As a gal who has spent plenty of time on the farm and in the city, the key for coworking is the ability to reign in the farmers in agricultural settings. While I know several farms who have successful operations, there are several who really struggle from milk/grain check to milk/grain check. And while CSAs can be profitable, farmers still struggle to utilize the internet, especially older generations. The young generations of farmers are very much tech savvy, but don't necessarily have the time to develop an internet presence. Therefore, the key to building coworking in agricultural areas is to assist young farmers develop key relationships with internet marketers, etc. through the coworking spaces, and in turn they assist each other, with one outcome being internet sales.
NWC, I believe, had a cupcake baker who met with a photographer during nightowls for design coverage. There are number of rural photographers, small business people, who can thrive in a rural setting and provide farmers with much needed support for their business ventures. The key is getting the word out, and letting the older generation know that increasing profits from an online operation can be the key to the farm making enough income that the younger generation will want to remain on the farm.
