My approach is:
- for simple changes (like adding a few pixels here, or changing an id
there...), just grep the xml files for what you and edit it with
whatever text/XML editor you like.
- for complexe changes: take a snapshot, do your changes, take another
snapshot, compare both snapshots, integrate you changes.

Something that's might be worth knowing: if you change for example a
String Widget into a Text Widget in the xml files and reload the
profile/import step, your changes won't be applied: you have to
delete the original widget first. Of course if you did it it the ZMI
in the first place, there's no problem.
To summarize, there's no transtyping of objects (nor deletion).
There's a trac entry about this issue, which has been postponed to
3.4.1, IIRC.
