You can create as many directories as you want. To plug on a LDAP you should you
a LDAPBackingDirectory. You'll need to write a schema and a layout for that
directory. You can have a look at the profiles folder of the CPSLDAPSetup for
examples (though they migh probably get too complicated for your simple use case).
Can I have it edit in CPS?
Yes like any other directory.
Can I use and LDAP backend for address book of CPSMailAccess?
Probably but not 100% sure.
