I found "Practical Cryptography" by Schneier and Fergusen to be a good read from a implementation point of view. Its not as "toyish" as Applied Cryptography - it leans more towards HAC but with an emphasis on implementations. If you are interested in purely academic, go with the HAC and then follow the trail of who references the references (similar to a patent search).
