If you type the cvar into your console without any args, you will typically get a description of what it is. If you're modifying 'hidden' cvars, fire up an older engine/game (P2/L4D2/OB or if you're going for ultimate accuracy, fire up CS:S) and look at what they mean there. TF2 is free.
