It stands to reason that while Grey flesh might be protein, if they are
genuinely extraterrestrial their proteins might very well not be compatible
with terrestrial life. That is, if you ate it it would poison you. The
hallucinogenic effects aren't surprising; most known hallucinogens are
poisons.
