Consumers could still be eating BSE-infected meat resulting from
contamination in slaughterhouses, scientists warned on Tuesday.

A number of UK abattoirs are used for both rendering cattle over 30
months old - those most at risk of BSE - and slaughtering younger animals
for food, says a report published by the UK's Royal Society and the UK
Academy of Medical Sciences. At the moment an EU rule forbids both
groups of animals from being treated on the same day and the premises
must be sterilised in between.

But the report points out evidence published in 2000, that prions survive
normal sterilisation techniques, even surviving in samples heated up to
600�C. This means that there is a theoretical risk that prions from BSE-
infected cattle killed on day could infect food animals slaughtered the next,
say the authors of the report.

"Urgent consideration needs to be given to the possibility of cross
infection," says Brian Heap, vice-president of the Royal Society, and chair
of the group that authored the report. "Quantifying the risk is something that
is very important now."

But he points out that only one study so far has tested the stability of prions,
and that more work is needed to confirm that they really can survive such
high temperatures. "It came as a surprise to everyone how stable prions
seemed to be," he says.

Operations at the eight slaughterhouses licensed for slaughtering both
groups of cattle were suspended in February because of foot and mouth
restrictions. Further investigations into the risk of cross-contamination will
be carried out before work restarts, promises John Krebs, chairman of the
Food Standards Agency.

"There are strict rules to prevent cross-contamination, but these need to be
re-examined in the light of this report," he says.
