FYI,
DNS-over-HTTPS is a recent new "thing" that is being worked on and will be
used by at least browsers (client-side) and offered by huge providers
(server-side).
I've jotted down some first basic ideas in our wiki on how to go ahead and
implement support for this in curl, should someone feel inclined to...
