For all you OS X fans there is a very useful GUI called cocoamysql (http://cocoamysql.sourceforge.net/) which is FLOSS and sqleditor (Not FLOSS $55) that I have used and they are great. cocoamysql allows you to modify tables, make tables, perform adhoc queries.
I tried out cocoamysql. Indeed, it has a really nice interface. However, I opened up a table with a large number of rows (> 50 MM), it konked out.
sqleditor allows you to do some of the same things in addition, it will draw tables which you can connect (think ER diagram) and it will generate the key relations from the connections (it did not create a create table sql command that would load in MySQL for me, but maybe I was not operating it correctly) Other than that it seemed to work quite well.
That would be a nice feature to have, drawing the ER diagram and then have the software generate the SQL statement.
Have yet to try the Query Browser and Administrator from mysql.com.
