This is a terribly analog question, but why would you want to?
Is it a security thing or does the machine you are using it on not have an interface and it is causing problems?
In knoppix I think you can "step" through the loading process and you might be able to CTL-C out of loading the interface.
In debian you might be able to do a custom (package-by-package) install and leave out the interface package. This is assuming you have the CD set to install from. There may also be a "minimal" installation which will just give you an OS without X 11 and ethernet.
Or you could unplug from the net and do a usual install of either (from CDs). Then turn off the interface if you absolutely don't want them used.
