When [the other] Craig and I were at Wave, this issue came up, and I believe
the only correct way to use Unix as a term is all caps (UNIX).
For the rigorously correct usage, check the trademark usage guidelines at:
http://www.opengroup.org/tm-guidelines.htm
We are often lax in our protection of the trademark, though, and you will
see the terms UNIX-like and *nix frequently. These are specifically (and
generally) prohibited in the document.
[I have started referring instead to Linux-like in discussions, but that may
violate their trademark instead]
