Turns out that this does work for EBS volumes:
# attach volume to instance
ebs=/dev/xvdj2
shred --iterations=0 --zero --verbose ${ebs}
od -bc ${ebs}
# detach volume from instance
The attaching/detaching happen via the API or the management console.
Now to figure out how to wipe snapshots and S3 objects.
