Years ago, perhaps they still do, "Guns & Ammo" used to have a advert for
Marlin Firearms on the back cover. Each advert had a different recipe for a
particular edible animal and featured also a rifle from the Marlin product
range that could be used to take that game.

Many recipes, including squirrels, were a variant on frying them in a pan
with various additional items such as onions, vegetables, meat stock etc.,
etc. I never tried any of them!

However, how I did prepare and eat my squirrels was as follows. Skin the
squirrel and remove the "guts". Chop off head, feet and fore-feet. Strange
that makes six in all...two rear feet plus its front fore-feet....!?

Then joint the squirrel. You should get five pieces. The four legs and the
backbone between ribs and rear legs. Wash in salt water. Then wrap a rasher
of streaky bacon around each piece.

Place under a grill. Grill on top side for five minutes, turn and grill on
bottom side for ten minutes then, finally turn and grill on top side for
another five minutes to finish.

Serve. The bacon fact serves to baste and flavour the squirrel meat. It is
quite delicious. Don't be "put off" by the fact that you really want two
squirrels per person if it is a "main" course.

That squirrel I saw the other day was more than a main course!
