$DISPLAY is empty over here unless I manually set it. But then, I'm not sure if it has something to do with your problems, as 127.0.0.1:0.0 points to the first display on localhost, which IMHO isn't all that wrong. What happens if you set $DISPLAY manually, e.g. to ":0.0". This always worked fine for me.
