This is an interesting one. I'll use the tweezer as an example because it's convenient. Look at the edit menu. Undo and Redo are there with the proper keyboard shortcuts (Ctrl+Z and Shift+Ctrl+Z). Now, go into preferences to the menu editor and look at there hotkeys. First, the \t character is displayed as a square. Second, it says that there is no currently assigned key. Third, if you assign a hotkey, say Ctrl+Q, look at how Ctrl+Q gets tacked on in the menu but you still got the square problem and you don't get rid of the Ctrl+Z.
