I have been collating English-based resource material for gvSIG on my 
website. This would be a reasonable place to start. I have included 
links to other repositories. This will be where I publish my tutorials 
when they are completed.

gvSIG although written by Spaniards has been translate to English. 
Comprehensive English documentation is what is missing.

gvSIG works with PostgresSQL.

If you are interested in geospatial analysis/mapping and what is out 
there, try the osgeo-discuss mail list. This group is a great group of 
people that will help you identify potential packages that might also 
fit your needs (i.e. ability to programmatically collate and present 
geospatial data; there are a range of good alternatives, especially if 
you just want to present 'maps')
