I've tried over the version of sshfs that runs over FUSE, and it turns
out that it's a bug in sshfs. The following fails with EPERM:
$ touch a
$ touch b
$ mv a b
In other words, rename(2) doesn't allow clobberring an existing file.
Could you please check if the same is true over LUFS, and forward this
to the relevant developers?
