Hi Christian,
regarding 1) that issue is not limited to tagging but general darktable 
behavior. We are discussing an alternative right now here: 
https://github.com/darktable-org/darktable/issues/6025

I don't use tagging a lot so I cannot talk about the other points but opening 
an issue to discuss might be a good idea.
