Hi Pascal,
I think it would be a nice feature and the keys combination you proposed
(ctrl+s) seems to be not assigned by default in Darktable, however that's
the standard to save a file in almost every software and that may be
confusing to someone. So, you could use the "ctrl+u" combination (u =
unveil).
