I'll have to redo the calibration, but otherwise it's correct.

For grayscale no icc profiles are provided (in contrast to color prints).
I've already used the softproofing feature of dt with other icc profiles.
Quoting the website:
"
[...]
Uploaded files should ideally be 300 DPI, 8-bit, and have an embedded sRGB
color profile.
[...]
Color space
Your files may be uploaded in RGB or in CMYK. CMYK files will be converted into
RGB in the production process. If a color profile is not attached to the file,
we will assume that your file has an sRGB profile. For grayscale files, we use
GrayGamma2.2 as a basis."
I assume GrayGamma2.2 is an Adobe thing.
In Gimp I can add a Gamma display filter and input a Gamma value of 2.2.
Photoshop does perhaps offer something similar (???).
When using 2.2 the image changes quite drastically, so I'm not sure even this
approach would be correct. But of course, I would very much like to keep my
workflow within dt.

If the GW2765 2015-03-12 S 3xCurve+MTX profile is correct then it's fine.

Did they provide you a .icc file? Or could you find the right one on the Web
somewhere? If you got it, put it into ~/.config/darktable/color/out/ (you
probably have to create the directory first). Then you can select it as the
softproofing profile in darktable by right clicking the softproof button in the
lower toolbar of darkroom.
