The "monochrome" module should do what you want (for B&W). https://www.darktable.org/usermanual/ch03s04s03.html.php Sepia is a preset in the "split toning" module: https://www.darktable.org/usermanual/ch03s04s05.html.php
I'm not sure I understand what you mean by "flip it back." Everything in darktable is non-destructive, so you can always undo a change.
