Darktable uses tags, see:

How do you control what "some sites/photo sharing sites" consider
keywords?  The only way I see to control what is considered "keywords" is
to only use tags the "photo sharing site" considers "keywords"

Use the "tagging" module located on the right panel in the lighttable
display.
