so far there is no such option. What we have are blend modes that limit a module's effect to only Lab lightness (= L channel) or Lab color but there is no option to have the effect to individual a and b channels. But please bear in mind that darktable is fundamentally different to PS. So even if we would have such a blend mode, you won't be able to have it working like in PS.

Concerning viewing individual channels: not possible at the moment.
