Not a video and not for DT, but ...

There are excellent couple of books on B&W digital photography that are about
using a colour DSLR then converting, by Michael Freeman from the Focal press.

I have the pocket book "Field Guide",  ISBN 978-415-83351-6
and there is on my tablet the ebook.
he covers quite a wide amount of information about the physics, the psychology,
the social impact of B&W before getting into the 'how to do it".  The techniques
he covers are extensive, very thorough.

The sliders he illustrates I guess are out of photoshop, he doesn't say, but i
have no problems mapping his concepts onto DT.

I find a book I can pour over and examine in this detail a LOT more useful that
a video for a number of reasons.  Not least of all that he illustrates a number
of different settings at each point and the book format makes it very easy to do
the 1-2 or 1-2-3 or 1-2-3-4 comparisons and only then look at the slider
settings between each one.
