Mint 18.3 is based on Ubuntu 16.04, and there the standard version for
darktable is indeed 2.0.3. It's possible that other repositories provide newer
versions, and that you got it from one of those on your previous install.

most likely you used Pascal's PPA version before (?):
sudo add-apt-repository ppa:pmjdebruijn/darktable-release
sudo apt-get update
sudo apt-get install darktable
