Been there done that, very confusing isn't it!
Which Mint version are you using?
Mint 18.x uses Ubuntu 16.04 base whilst Mint 19 uses Ubuntu 18.04.
If Mint 18 then use the instructions for 16.04.

Add the repository at:
'https://launchpad.net/~pmjdebruijn/+archive/ubuntu/darktable-release'
to your source files in 'Software Sources' as this contains the package
needed to make mapping work.
You can then ignore the later instructions for Linux Mint.
If Min 19.x then use the list of packages at
https://redmine.darktable.org/projects/darktable/wiki/Building_darktable_22#Ubuntu-1704-and-1710
Some packages have been superseded by a newer one with a higher version
No., this can be worked around by checking for the package in Synaptic
Package Manager and installing from there.
As to 'apt or apt-get' either should work in Ubuntu although I believe
apt alone is sufficient.
Clear as mud I'm sure but it does work!
Would be good if one of the Developers could find the time to update
that Wiki page, but I guess they have other priorities .

According to this error log, LLVM not being found is just a warning
-- what is actually tripping the build up is the absence of the XML
parsing program, 'xmllint'.
Have you tried installing all the packages in the list of
dependencies on Darktable's install page
(https://www.darktable.org/install/#source)? That should have tracked
in the XML parser.

sure if I need to install that or not.
