Why? Out of camera Jpeg is "designed" by the engineer of the camera. Not two jpegs from different vendors are the same. So why it is even good? Why it is even a good start? This question comes very often and I'm still not understanding the goal. The out of camera jpeg is one possibility out of many others and most the time the vendors do boost the colors as it please the beginners. Try Filmic, do the rendering yourself...
