Plus a third choice.  Try the profiles from Nikon, Pentax etc. as well and use 
whichever gives the results you like the most.

I don't know what the Faithful mode actually does; what I can image is that it 
uses a built-in profile, once measured by Canon, to produce sRGB or AdobeRGB 
with exactly the colours the camera sees (excluding white balance and 
exposure).  But do you really shoot in JPEG?

I don't think you can export this built-in profile.  And it is probably not 
better than the "standard matrix" in DT.  You have two
options:

1. Try the standard colour matrix instead of the enhanced colour
   matrix for your camera in DT's input profile module.

2. Create your own profile, which implies to order a colour chart on
   the Internet.

I can provide additional information for (2) if this is interesting to you.
