thank you all for your suggestions.
I made several test, in the end it seems that image displayed at 100%
with Gwenview is the same as Darktable in darkroom mode, and it's also
the same regardless of the zoom using GIMP.
So no issue from my side about Darktable, probably as suggested it was
just a matter of speed against image quality.

Can you easily display at once on your screen a darktable window and
your viewer window side-by-side showing the same picture at 100% size,
take a screenshot into a lossless format (e.g. PNG) and share it to
the list ?
It might give insights more easily than trying to explain with words.
