Profiled denoising requires a noise profile (hence the name) of your
camera sensor. For many camera types, developers or users have already
submitted noise profile data, which are included into the darktable release.
Until now, nobody has submitted noise profiles for those two cameras. No
noise profile - No reasonable profiled denosing.

One additional remark: Support for Fujis X-Trans sensors is just about
to mature in the development branch (master) and is most likely part of
the next darktable release (i guess this will be 1.6)

"z" is the fullscreen (zoomed) preview, the focus detection feature is
invoked by ctrl+z (or shift+z, i am not sure what the default is)
You can look this setting up (and change it, if you want), in the
preferences window, tab keyboard shortcuts.
