AFAIK, there's no way to do this in darktable. You can crop, but not add
new pixels.

OTOH, that would be rather easy on your picture with Gimp. Try the
liquid rescale, or just enlarge the canva and fill-in the blank space
with a clone tool or an inpainting plugin (resynthesizer, G'MIC).
