As far as I know, they are pretty much hard-coded. Go to settings, presets. You'll see modules listed. Open a module such as base curve; you'll see a list of presets: name, camera model and maker, lens, ISO and other settings. A 'lock' icon (1st column) means it can't be modified; a tick in 'auto' (last column) means it's applied automatically for images matching the camera mode/name/lens/ISO... filters. You can make your own presets and have them applied automatically. See http://www.darktable.org/usermanual/ch03s02s03.html.php I have no idea how to turn off a DT default (locked + auto) preset; I think it can be modified in the DB. I have not found a way to apply my own standard default style to raw images (e.g. DT authors themselves say tone curves are often a better approach than base curves, yet base curves are the default and I haven't been able to find a way to auto-apply a tone curve based style). You can create your own style and apply it manually after import; maybe there's another way but I haven't found it.
