Provided your camera's clock is still in sync with what it was when you took 
the pictures (i.e., you didn't change it and it didn't drift too much in the 
mean time) you can still take a photo of your GPS device now. The offset 
should be the same.

You are right, we only store the resulting time. Not a great design, but it's 
the status quo (which is supposed to change some day, but don't hold your 
breath). Since we store all your edits in the XMP sidecars (besides grouping) 
while NOT adding the time to these it should be safe to remove the images from 
your database (select, hit <del>, maybe confirm) and then import them again.
