Another idea would be to create a customised LiveCD/USB image with
Darktable installed and maybe your sample images and other material for the
workshop preloaded. There is plenty of material around for customising
images, e.g.

OpenCL is still an issue with this approach of course, but it is possible
to enable with some fiddling (depending on the hardware), and you don't
have to worry about it upfront.
