you have to activate logging inside the command line, check the doc for
command line options.
you probably want to edit the XMAIL_CMD_LINE inside /etc/rc.d/init.d/xmail
XMail does not use syslog for 'standard' logging ( only for sever errors )
and you can find long files ( once you activated logging ) inside
$MAIL_ROOT/logs
