did you type ? :

HELO foo
MAIL FROM:<xxx>
RCPT TO:<yyy>
DATA
To: meaw meaw <yyy>
[empty-line]
[message-text]
..

The To: header is not automatically put by the server, it's MUA
responsibility to fill the header.
