For POP3 for example i use this on the server ( XMail ) :

/usr/local/sbin/stunnel -d 995 -r 127.0.0.1:110

this open an SSL tunneling port ( 995 / POP3S ) and link it to the local
port 100 ( POP3 ). The stunnel docs has examples about this.
