If you have NOR partitioning working you can unlock a partition with
(mtd3 is the partition in this case);
flash_unlock /dev/mtd3
 
Then erase with;
flash_eraseall /dev/mtd3
 
single sectors I am unsure of, we use jffs2 for our file system and that
handles single sectors...
