Confirmed, the wiki has the latest, appropriate content on changing memory maps.
To your other question, I don't think the DVSDK ships with the necessary components to rebuild the demo servers - specifically because the codec libraries are required. I think TI has an avenue through which you can get the eval codecs and server build scripts... but I don't know what that process is. Hopefully someone can chime in and help point you in the right direction.
