I think I see the problem here.
Your failure is:
mount: server 10.100.21.95 not responding, timed out
Root-NFS: Server returned error -5 while mounting
and the reason is most likely because your configured IP address is
192.168.1.101
You can't reach your server from your IP address. They need to be in the
same address ranges.
Go to the configuration on your router and either turn off DHCP and let
your 10.100 domain configure your IP address (are you running DHCP on
the PC?)
OR statically configure an IP for your eval board (ip = 10.100.21.xxx).

Wanted to explain my setup first and then display my failure message with
the printenv setup also
1) My setup is a PC running Red Hat Enterprise Linux WS release 4.
This is straight ethernet cabled into a Linksys Router BEFW11S4. It
happens to be a wireless router but I'm just using the 4 ethernet ports
on the back. The PC is hooked into port 1.
