A couple of comments:

I sent a patch to the list this morning which fixes the EVM-supplied
u-boot sources for me.

And, you can update u-boot from a running linux using MTD - though you
may have to turn off the "writable" bits in the board setup definitions
for the low area MTD partitions first.

The firmware update process I have implemented for our product runs as a
linux application and uses MTD to rewrite u-boot, u-boot environment and
uImage. It works well.

So
1. Update your kernel image to one that makes the appropriate MTD
partition writable
2. Boot it
3. Rewrite u-boot from linux
4. ...
5. Profit
