Absolutely. It can be as simple as installing V8 over the existing V7.2 code and migrating your db's with the migrate command or it can be a little more work given the environment you have and plan to have after the migration. You may have to update your instances, migrate/move Stored Procs, .... This is firly well documented in the Quick Beginnings for the specific operating system as well as in the V8 release notes which are available on line.
