JJ's Chili Dogs
Kids will love these tasty chili dogs.

Cook Time: 15 minutes
Total Time: 25 minutes

INGREDIENTS:
1 1/2 lb lean ground beef
slices of American cheese
cooked hot dogs
hot dog buns
1 medium to large chopped onion
2 tbsp oil
1 8 oz can tomato sauce
1 6 oz can tomato paste
3 tbsp chili powder
1 tsp salt
dash Tabasco sauce
1 cup water

DIRECTIONS:
1. Brown ground beef and onion in the oil in a large saucepan. Mash the ground 
beef with a potato masher as it cooks so that you break it up into uniformly
fine pieces.
2. When the onion is translucent and the beef is completely cooked, add the 
remaining ingredients (except the cheese, hot dogs and buns). Cover and simmer
on low heat for at least 30 minutes, stirring often as the mixture is thick and 
will stick to the pan easily.
3. Place one slice of American cheese in each hot dog bun. We break the cheese 
slice in half so that you can overlap the pieces lengthwise and cover the
entire bun. Add the cooked hot dog, smother with chili and then top with 
chopped onions.
4. Cook's Tips: If the chili mixture gets too thick, add a little water. If it 
is runnier than you want it, take the lid off for the last 10 minutes. Use
fresh hot dog buns and your favorite hot dogs. We cook ours in one inch of 
boiling water to steam them. They cook more evenly by steaming them than in
the microwave. Also, the chili freezes great. I divide it into containers so 
that the amount will top 2 hot dogs. That way we can have them for lunch,
or when we are not all eating at the same time.
5. Variation: If you want a "Coney Island" dog, first spread one side of the 
bun with mustard and the other side with relish. Then put the cheese in, add
the hot dog and cover with the chili mixture.
