You can add sieve scripts in two ways:

dbmail-sievecmd(8) is the commandline interface
dbmail-timsieved(8) is the network interface

please read their respective man pages for more detail.

the protocol used by dbmail-timsieved is documented:
http://www.ietf.org/internet-drafts/draft-martin-managesieve-04.txt

Though still a draft, there are several clients that support it such as
kmail, opengroupware.org, squirrelmail (?).

There's plenty examples in the rfcs:

Check http://www.dbmail.org/dokuwiki/doku.php?id=sieve for what
currently works (and what doesn't).
