There's at least a couple ways to accomplish this, probably more:

1) Set up the production dbmail server to connect to a database server on the 
test server. This will keep all the mail on the test server. Has anyone 
tested two dbmail setups working with the same database yet? This in theory 
should work fine. 

2) If it's MySQL, you can use database replication to replicate a the 
production database on the test server. In my experience this would only work 
if you inserted all mail on the production server and only received mail on 
the test server. Otherwise key violations could be possible. Once again, in 
theory this would work. 

3) You could use your MTA on the production server to forward all mail to an 
MTA on the test server. 

That's all the idea I have right now, I'm going to go vote. Hope that helps.
