I think I'm really stuck on this one...

Yes. I'm pretty stuck....

apt-get clean
apt-get update
apt-get install libgmime-2.0-2
apt-get install dbmail dbmail-mysql ...

dbmail is missing a dependency on libgmime. I'll fix that asap.

But I can't reproduce your problem. The package has gone through changes
without changes in the versioning, to fix packaging problems as I'm
working to get dbmail included in debian. So that might explain your
problem. That *should* be fixable by running the first two commands
listed above. This assumes your not defining a proxy in /etc/apt/apt.conf

OK, I forgot about 'clean'.
I downloaded them manually and installed everything by 'dpkg -i'

But I didn't get stunnel to work just yet. But I can connect to 143 just fine.

I am 99.9% sure that I restarted everything that could be.
