I have never used pbuilder and never encountered your problems but the obvious difference I can see between pbuilder and schroot is that pbuilder builds in /tmp; perhaps it is simply running out of space in that filesystem? (On my machine, /tmp is a tmpfs limited to half the amount of physical memory in the system and I think this is the default in Debian.)
