For dual opteron, Tyan boards (esp S2881 and 2) aren't cheap, but they're nice. (Tyan even _supports_ LinuxBios on them, and has an lm_sensors config you can download.)
The older Tyan opteron boards are very cheap now - I have the S2875 ANRF, and I have not a single complaint.
